A waxed-canvas roll that holds a full set of knives blade-down, each in its own slot, then buckles shut and goes over a shoulder. It is 95 cm unrolled with a 140 cm strap; the knives in the photographs are not included.

A row of individual slots, each 5 cm wide and 11 cm deep, takes a knife blade-down so nothing rides against anything else. That is the whole job: an edge that meets another blade in transit is an edge that needs re-sharpening. A zipped pocket at each end holds the things that have no slot — a steel, a peeler, scissors.

Oil-waxed canvas with leather straps and antique brass buckles. The wax is what makes canvas shrug off a splash and a scuff, and it is the reason this kind of bag looks better after a year than it did new. Empty it weighs 915 g, so almost everything he carries in it is knives.

Unrolled it is 95 cm across. Rolled and buckled it is a compact cylinder with a leather grab handle on the top, and the 140 cm shoulder strap clips on when a hand is not free. The strap is detachable and adjustable, so it comes off entirely when the roll lives on a shelf.
